Vegan Protein Pancakes

For making vegan protein pancakes, you will need half a ripe banana, 30 grams of vegan protein powder, 1 tablespoon ground flaxseed, 120 ml plant milk, 1 tablespoon baking powder, ¼ teaspoon cinnamon, half cup oatmeal, and a sweetener.

The first step is to mash the banana. Then mix the flaxseed with 2 tablespoons of water and set it aside. Wait a few minutes and mix the mashed banana, protein powder, plant milk, baking powder, cinnamon, oatmeal, sweetener, and the flax & water mixture. Mixing all these ingredients will make it a thick, pancake batter mixture.

You can scoop the mixture on a heated pan and cook each side for about 3 to 5 minutes. Once it is cooked, you can eat it with your favorite jam or nut butter.

Lentil Shepherd’s Pie

For making this healthy vegan meal, you will need 100-200 g soy milk, 500 g cubed white potato, 500 g cubed sweet potato, I batch lentil Bolognese, and salt and pepper for taste.

Boil the potatoes for about 20-30 minutes while the Bolognese is simmering. Once the potatoes become soft, strain them and mash them with soy milk. Add an adequate amount of salt and pepper to taste. The next step is to spoon the lentil Bolognese into the oven dish. Then add mashed potatoes on top.

For extra flavor, you can add some fresh herbs. Once you add all the ingredients, heat it to 400° F for about 15 minutes in an oven. After it is heated in the oven, you can grill it for a few minutes to get a crispy layer on the top.

Stuffed Sweet Potatoes

For making this wonderful dish, you will need 3 sweet potatoes, 100 g corn, 1 tomato, 1 can black beans, half teaspoon ground cumin, half onion, half teaspoon paprika, 2 tbsp water, tahini sauce, lemon juice, and coriander to garnish.

Start by baking the sweet potatoes for about 60 minutes. Slice the potatoes half lengthwise once it is baked. Then fry the corn, black beans, onion, tomato, and spices in a pan for about 10 minutes.

Mix the tahini paste with water and lemon juice for creating your dressing. Then add the bean mixture on top of the sweet potatoes. Add the tahini dressing on top of that and finally add coriander to garnish.
